Healthy High Protein Raspberry White Chocolate Bread
This White Chocolate Raspberry Loaf is simple to make and rustically pretty! The raspberries add moisture that keeps it fresh for days, while the invisible white chocolate bits adds great little pops of sweet. A slice of this improves any day!

This is one of those recipes we confusingly call a “bread” or “loaf” but is not actually a proper bread made with yeast. It’s called “quick bread” in reference to the speed with which they are made (ie no yeast = no rise = fast to make!).
Not only that, it is high in protein, not too sweet, and provides little pockets of sweetness from the white chocolate chips. It’s a classic combination really, white chocolate and raspberry.
What you need:
1 cup powdered egg whites
1 cup water
1 cup blended cottage cheese
1/2 cup raspberries
1/2 cup sweetener (I used monk fruit)
Juice of 1 lemon
Optional for topping: 1/4 cup melted SF white chocolate
How to make it:
1. Set aside a few of your raspberries and mash them. Then mix the egg whites with water and beat using an electric mixer until stiff peaks form. *About 5 mins*
2. Stir in your raspberries, cottage cheese, lemon juice, and sweetener. Pour it in a greased, parchment lined loaf pan & top with your mashed raspberries.
3. Bake it at 350F° for 35 minutes. Let it cool completely, top with your melted white chocolate, slice it and enjoy!
